Gradually stir the mixture into the simmering broth mixture until thickened and bubbly. Remove from heat; stir in the melted butter and 1 cup of the shredded cheese until smooth.
Spread half of the sauce over the bottom of the prepared baking dish. Arrange half of the sliced vegetables over the sauce. Top with another 1 cup of sauce and another layer of vegetables.Repeat these layers once again. Sprinkle with the remaining 1 cup cheese and panko bread crumbs.Bake uncovered for 25 minutes or until heated through and bubbly around edges. Let stand 10 minutes before serving
